Thick and Fluffy Pancakes

Yay for shrove Tuesday!

Ill make any excuse to have pancakes, birthdays, pancake day, a random Wednesday in june.
Pancakes aren’t just for one Tuesday in February.

My favourite type of pancake are the chunky fluffy american/ scotch pancake.
I don’t mind a crepe, and Ill happily eat a crepe with lemon and sugar when I go to France, but if I am making pancakes then it HAS to be scotch pancakes.

So I will share my pancake recipe with you so you can enjoy them too!


175g Self Raising Flour
1 tsp Baking Powder
40g Caster Sugar
1 Egg
300ml Milk (around)

Makes 10-15 depending on size



Flour, sugar & baking powder

Start of with your self raising flour, caster sugar and baking powder in a bowl.
Whisk them together till they are all incorporated.


Egg and milk in centre

Make a well in the centre of the mix and add the egg and about 150ml milk.

Mix it all together with a whisk, at this point the mix will be very thick, at that point add the rest of the milk and keep mixing until you have a smooth mixture.


At this point add the rest of the milk


Whisk until the mix is smooth

Place a frying pan on a medium heat and spray with a little oil.
(I always use a crepe pan that I brought from France years ago, but normal frying pans work just as well)


Pour some mix into the pan

Pour some of the pancake mix into the centre of the pan – it will spread a little once your pour it.


Pancake ready to flip

Once the pancake has developed air bubbles like the picture above they are ready to flip.
Once flipped they will rise slightly, and after about 10 seconds they are ready to take off the heat.


Nutella filled pancakes

If your a Nutella addict and fancy some melt in the middle Nutella pancakes…..


Dollop some Nutella in the middle of the mix

Once you put the pancake mix into the pan, turn the heat on low and put about a teaspoon worth of Nutella in the middle of the mix.


Cover with more mix

Once you have put your Nutella in the middle, pour over a little more pancake mix on top of the Nutella and cook in the same way you would for the normal pancakes.

Then stack and cut right through the middle for warm, melted, gooey, Nutella-ness!

They are a favourite in my household, and they are so versatile!

Nutella, lemon, golden syrup, maple syrup and if you have any left over the next day then they are so good toasted and spread with butter! Yum
